Think of this as the cool older sister to the well-known Butternut Squash Mac and Cheese. This fall-inspired twist on the classic carbonara has a creamy blend of roasted squash, onions and herbs with egg yolks and cheese. It also swaps guanciale for pancetta (traditionalists don’t come for me) and is topped with crispy fried sage, because, why not? It’s luxurious, decadent and everything you want to indulge in during a cozy night in.

Sage & Butternut Squash Carbonara

Ingredients:
  • 1 lb. Pasta
  • 1 Small Butternut Squash
  • 1/2 Yellow Onion
  • 6 cloves of Garlic
  • 4-5 Sprigs Fresh Thyme
  • 2 Tbsp Olive Oil
  • 6 oz. Pancetta or Bacon
  • Fresh Sage, to garnish
  • 4 Egg Yolks
  • ¼ Cup Pecorino Cheese
  • ¼ Cup Parmesan Cheese + more to garnish
  • Salt and Pepper
